Best Irish Soda Bread Dipping Sauce

One of the best parts of eating at the Raglan Road is enjoying homemade Irish soda bread with their well-known Guinness dipping sauce.

The Guinness dipping sauce is a reduction of Guinness sweetened with sugar. This delicious sauce takes no time at all to prepare.

Guinness Dipping Sauce Ingredients

Here’s a list of what you need for this stout beer dipping sauce:

  • Guinness Draught Beer
  • Brown sugar
  • Extra light olive oil

What Makes Guinness so Full of Flavor

Even if you’re not Irish, you must be familiar with the Irish dry stout called Guinness. Guinness stout is an offshoot of the porter style of beer that was originally made in London in the early 18th century.

Guinness has a very distinctive burnt flavor that comes from the use of roasted unmalted barley. The wonderfully enticing thick creamy head of Guinness results from the beer being mixed with nitrogen when being poured.

How to Make Guinness Dipping Sauce

  1. Combine the Guinness and brown sugar in a medium-sized saucepan over low heat.
  2. Simmer the mixture for about an hour. It should reduce by half or more. Do not walk away while this is cooking. The mixture will bubble up and you need to stir it from time to time so it does not bubble out of the pan and onto the stove.
  3. Let the sauce cool to room temperature.
  4. Stir together equal amounts of Guinness reduction and olive oil.
  5. Serve the sauce with Irish Soda Bread.

Reduce the Sauce Carefully

It’s important to reduce the Guinness/sugar mixture carefully. It needs to be simmered on low for about an hour – this will reduce it by at least half.

The more reduction, the more tang you will get. You don’t need to stand over the pot for a whole hour, but you do need to pay attention and give it a stir every now and then.

Ingredients

Guinness Dipping Sauce

  • 1 3/4 cups Guinness Draught Beer
  • 1 2/3 cups brown sugar
  • 1 cup extra light olive oil

Irish Soda Bread

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon kosher salt
  • 2 1/2 teaspoons baking soda
  • 1/4 cup cold unsalted butter cut into small pieces
  • 1 1/2 cups buttermilk
  • 1 tablespoon milk

Instructions

Guinness Dipping Sauce Directions

  • Combine the Guinness and brown sugar in a medium-sized saucepan over low heat.

  • Simmer the mixture for approximately an hour. The mixture will reduce by at half if not more. The more this reduces the better, as you will end up with a tangy sauce.

  • Do not walk away while this is cooking, it will bubble up while cooking, and you need to stir it from time to time so it does not bubble over the stove.

  • Let the sauce cool to room temperature before serving.

  • When you are ready to serve the sauce, combine equal amounts of the Guinness reduction and olive oil. Do not use extra virgin olive oil because the flavor will not be right. Use extra light olive oil.

  • Serve the sauce with Irish Soda Bread.

Irish Soda Bread Directions

  • Preheat oven to 350 degrees.

  • In a large bowl, mix together flour, sugar, baking soda, and salt.

  • Using a pastry blender, cut the butter into the flour mixture until the butter is well dispersed and you have a crumbly mixture.

  • Add buttermilk and stir until just moistened.

  • Knead the dough for 1 minute on a floured surface.

  • Shape the dough into a ball and place it into a greased 1 1/2 quart casserole dish.

  • Use a sharp knife to cut an X across the top.

  • Brush the top with milk.

  • Bake at 350 degrees for about 45 minutes and tented with foil for the last 15 minutes.

  • Remove the bread from the baking dish and place it on a wire rack to cool.

Notes

This is not Raglan Road’s Irish soda bread. This is an Irish soda bread that I like to make. I couldn’t get past the delicious dipping sauce to even begin to focus on their bread!

We just visited there tonight. I ate all but one slice of the bread which I grudgingly shared with my husband & hogged all the dipping sauce for myself. Our server also gave me a partial list of ingredients for the bread. She said buttermilk and molasses. I don’t remember her saying brown sugar but I would believe it. She said the oils that the Guinness Reduction floated in were a blend of canola and olive. She offered more but I knew if I indulged that I wouldn’t have room for the Shepherds Pie and Bread Pudding which is amazing!

Raglan Road told me they use molasses and brown sugar in their Irish soda bread if that helps.

I had this there and it was amazing, its actually brown sugar that they use. When I asked our waitress she got me the head chef’s business card so I could email him and wrote down what was in it. Amazing! Love that place.. they have the best shepherds pie!!

I had this a year ago and thought I need to remember this and try making it at home. The other week I was trying to remember what alcoholic beverage it was they used in the dipping sauce and couldn’t for the life of me remember. Guinness, how could I forget? So glad you followed me on Twitter so I found your site. I’ll be making this very soon!

I’m salivating just reading this. The food at Raglan Road was excellent, and I am going to have to go to Specs tomorrow and pick up some Guinness so I can make some use it with my soda bread. 🙂
